These Sicilian Black Lentils come from the countryside around Villalba, in the heart of central Sicily. Naturally dark and small, they cook quickly without falling apart, keeping a lovely bite and a deep, earthy flavour.

If you love cooking with lentils, these Black Lentils will quickly become a staple in your kitchen – from simple salads with olive oil and herbs, to comforting soups and rich ragù-style sauces.

For best results, rinse the Black Lentils under cold water, then cook in plenty of lightly salted water or stock until tender but still firm to the bite.

Cooking Instructions (Guideline)

  1. Rinse the Black Lentils under cold running water.

  2. Optional: soak for 1–2 hours to shorten cooking time (not essential).

  3. Place in a pan with plenty of water or stock (around 3 parts liquid to 1 part lentils).

  4. Bring to the boil, then simmer gently for approx. 20–30 minutes, or until tender.

  5. Drain, season and dress with good olive oil and salt while still warm.
