We don't blend across regions or years. We don't heat, ultra-filter or pasteurise. What lands in the jar is what the bees brought back, with all of it — pollen, enzymes, wax traces — left intact.

Raw honey isn't just

A spoonful is a breakfast tonic. A drizzle is a cheese-board upgrade. A dollop is a baking ingredient that beats sugar. The only rule with raw honey: do not heat it above 40°C or you destroy the enzymes.

Drizzle raw Sulla or wildflower honey over aged pecorino, gorgonzola dolce, or a sharp Sicilian provola. The sweetness softens the salt of the cheese without overpowering it. Add toasted walnuts and a small glass of Marsala for full Sicilian effect.

Two heaped spoons of full-fat Greek yogurt. One spoonful of raw honey drizzled on top. A handful of toasted walnuts, fresh figs or pomegranate. Done in 60 seconds. Eaten daily in southern Italy and Greece.

Hot water (under 60°C to preserve the enzymes), a generous spoonful of raw honey, a fat squeeze of fresh lemon, a slice of fresh ginger if you have it. The classic remedy.
Never add raw honey to boiling water — it destroys the enzymes. Let the tea cool for a minute before stirring it in.
The oven-finish that elevates any roast.
Mix raw honey with mustard, lemon juice, a splash of EVOO and flaky salt. Brush onto chicken, lamb, root vegetables or salmon in the last 10 minutes of roasting.
Replace sugar in cakes and watch them improve.
Raw honey adds moisture, depth and a slight floral note that refined sugar cannot. Works particularly well in olive oil cakes, gingerbread, pound cakes and yeasted doughs. Reduce other liquid by roughly 1 tbsp per 1/4 cup honey, and lower the oven by about 10°C.
