Why does raw honey crystallise? Is it spoiled?
Crystallisation is the proof, not the problem. All real raw honey crystallises sooner or later because the natural glucose forms crystals at room temperature. Supermarket honeys don't crystallise because they've been heated to 70°C+ specifically to prevent it. To liquefy, place the closed jar in warm (not hot) water for 10–15 minutes. Never microwave or heat above 40°C.
Is raw honey really better than supermarket honey?
For sweetening tea, supermarket honey works fine. For flavour, traceability, biodiversity and food culture, raw honey is in a different category. Raw honey retains pollen, enzymes, antioxidants and aromatic compounds that pasteurisation destroys.
Where in Sicily is your honey from? How do I know it's not blended?

Honey can contain trace spores of Clostridium botulinum that an infant's developing digestive system cannot handle, presenting a serious risk of infant botulism. From 12 months onwards, raw honey is safe. For pregnant and breastfeeding women, raw honey is safe.
Can I cook with raw honey or does heat destroy it?
Heat above ~40°C begins to break down the enzymes. For best results, use raw honey in unheated or low-heat applications. For baking and roasting, raw honey still works beautifully — you're getting the flavour and moisture properties, not the raw enzymatic benefits.
How do I store raw honey?
Keep tightly closed at room temperature, away from direct sunlight. Do not refrigerate — cold accelerates crystallisation. Properly stored, raw honey has an essentially indefinite shelf life.
